The oldest document mentioning Latour dates from 1331.
This is an authorization granted to Gaucelme de Castillon by the
Seigneur Pons to build a fortified tower in the parish of Saint Maubert.
Until the end of the 16th century, Latour was a co-seigneury of which
co-owners receive rent from farmers who cultivate the land
land. At that time, vines did not cover the entire area.
